Mushrooms galore

One for the mushroom lovers. Once you know how to cook this, it is very easy to adapt and add a meat into it. Eat with boiled rice which will help soak up that lovely sauce.

Ingredients

Serves 2

  • 1 tbsp, vegetable oil
  • 1/2 onion, chopped into chunks
  • 1 clove, garlic, crushed and chopped (or pureed)
  • 8 mushrooms, quartered
  • 100ml chicken stock or vegetable stock
  • 1/2 tbsp cornflour mixture
  • 1 tsp soy sauce, or to taste
  • 1 tsp, oyster sauce, or to taste (if vegetarian don’t use this)
  • A pinch of salt, or to taste

Preparation

Prepare vegetables before beginning cooking instructions

Prepare the stock

Prepare the cornflour mixture

Ready? Let's cook!

Heat oil in a wok on high heat, until hot.

Add onions and garlic and fry for 1 minute, be careful not to burn the garlic.

Next add in the mushrooms and fry for two minutes

Pour in one ladle of chicken stock and leave for two minutes or until it is starting to boil.

Then gradually add the cornflour mixture, stop adding when the sauce is as thick as you want it. Once this mixture is well incorporated the sauce should thicken. See our How To article on thickening sauces for more details on this.

Add salt, soya sauce and oyster sauce and serve.

Extra notes: Serve with rice or fried noodles.
