One of our favourite recipes. An extremely tasty dish, can be served with a main or on its own, we highly recommend this one! You can add more vegetables to this dish as you wish, but we have chosen the ones with most flavour to compliment this dish. Enjoy!

Ingredients

Serves 2

  • 1 tbsp, vegetable oil
  • 1/2 carrot, sliced
  • 1/2 onion, sliced
  • 1/2 green pepper, diced
  • 4-6 mushrooms, sliced
  • 200g, beansprouts
  • 400g, egg noodles
  • A pinch of salt, or to taste
  • 1 tsp soy sauce, or to taste
  • Spring onions, sliced (optional)

Preparation

Prepare and slice the vegetables

Heat oil in a wok, on high heat until hot.

Add the carrots, onions and green peppers and fry for 2 minutes. Then add in the mushrooms and fry for an extra minute. Once done place the vegetables in a dish to the side.

Next, stir fry the beansprouts and noodles for two minutes.

Add the vegetables back in and fry for a further two minutes

Now add salt and soy sauce to taste and fry for one minute. Serve.

For extra garnishes add 1 bunch chopped spring onions.
