Chicken Vermicelli Noodles - Chinese Recipes for All

Vermicelli noodles take in flavour

Vermicelli is a type of noodle that will take in flavour. It has a lovely texture and coupled with chicken it makes for an excellent, nourishing dish for the family. You can buy vermicelli noodles from some supermarkets.

  • 1 tbsp, vegetable oil
  • 200g, beansprouts
  • 200g, vermicelli noodles
  • 1 breast chicken, cut into strips and fried
  • 1 tsp salt, or to taste
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Spring onions, sliced (optional)

Preparation

Cut the chicken into strips and fry in a wok for 3-4 minutes. Once cooked, place it in a dish to the side and begin cooking instructions. Alternatively you could use leftover chicken from your roast.

Boil a pan of water and add the vermicelli noodles. Boil for 2-3 minutes until soft. Drain and leave aside.

Heat oil in a wok, on high heat until hot.

Fry the beansprouts for one minute and then add the vermicelli noodles for two minutes.

Add the sliced chicken and stir-fry for three minutes being careful to keep everything moving.

Turn to low heat. Add salt, soy sauce and sesame oil (and spring onions if you want) and stir fry so everything is incorporated. Serve.

Extras: The noodles may stick to your wok or pan, which isn’t too much of a problem if you serve the dish soon, but you do want to avoid leaving the noodles in there and burning the bottom.
